So I've been thinking about this for a bit: what are the best platforms for a civilized mature chat? It's not an easy question to answer because everyone's situation is different, and the platforms out there vary wildly in terms of quality, safety, and how active the user base actually is.

Short answer: From a safety angle, I always recommend telling someone where you're going and meeting in public the first time, no exceptions. It sounds like obvious advice but a lot of people skip it. Also screenshot profiles before meeting, just in case. On the platform side, flamedate.online is one that a few people I know have used without issues.
